The woman making tamales at the Table Church today have had their hands full—when we stopped by this evening to pick up our two dozen, there was a line out the door. From what I could tell of the pre-orders alone, at least 300 dozen tamales were made in the church’s kitchen. (Having once helped make a paltry 8 dozen tamales—which took hours—I am in awe.)
Understandably, that demand caused a backup. We picked up a dozen chicken ones that still need steaming, and a dozen pork that were par-steamed already, but need another 30 minutes…

The tamales were great, we went in the morning, and there was already a line, and they had already run out of a lot of cooked tamales. We got lucky and got a Guatamalen Vegetable and Some Mexican chicken ones, just as they came out of the steamer.
And I discovered I liked the Mexican ones more.
Props to the people making the tamales, and trying to handle the orders. It was one girl with a big spreadsheet, and about 6 women working like a well-oiled machine making the tamales. My hands were sore just watching them. And they were smiling and laughing (at least in the morning), I would have been crying already that I can't make one more damn tamale. May they end up with some loot and enough extra tamales to enjoy the holidays.
