Man, I love Food Dude over at Portland Food and Drink. He is consistently on the ball and has an amazing perspective of the food culture in this city.
Case in point is his amazing post about the state of Portland's restaurant economy. It is both well reasoned and well written. You should check it out.
In particular, he points out something that I wholeheartedly agree with: If you're opening a restaurant in this economy, you must be on point. That's why I have a sneaking suspicion we're going to be seeing more from Tommy Habetz of Bunk Sandwiches. Bunk is looking like a great place to launch an empire. With the low overhead, minimal staffing, and big crowds, I have a feeling he'll be using the money from Bunk to open up another joint in the future, keeping Bunk around as the flagship.
Food Dude points out how well this strategy worked out for Andy Ricker of Pok Pok, whose shack has (over the years) turned into a restaurant and lounge, and will soon be expanding into Chinatown as Ping.
There's still light in the restaurant world, but that doesn't mean that those shadows flickering at the edge aren't less menacing.
