Food Lyrical Butchery

Remember when I posted the video about the making of fake chicken product yesterday? Well, in the spirit of fairness, today I present a video of a whole pig being broken down by butcher Vadim Akimenko of Boston, MA, taken from an excellent blog post about his goal to bring humanely raised and slaughtered local meats to the urban Boston marketplace.
Be warned: In spite of the very pretty Kings of Convenience soundtrack, the video from Paper Fortress does feature close-up shots of blades cutting flesh. So, if you're squeamish about such things don't watch it.
