Goodbye to St Jack Brunch, Hello WAFU

If you have yet to hit up St Jack for brunch, this weekend is your last opportunity. Sunday will be the last day the restaurant serves the collaborative menu between inhouse mastermind Aaron Barnett and former Fin impresario Trent Pierce. That's because Pierce is leaving to concentrate on the opening of WAFU, a Japanese ramen house serving specialties aimed at rivaling Pok Pok, which it will neighbor in its location on 31st and Division. This has got me particularly excited because I've often complained that for a town with as modern a food scene as Portland has, it should not be so hard to find a vegetarian bowl of ramen. Thankfully a few have popped up recently (besides the literal popping-up of Boke Bowl, Mirakutei has added a veggie version to its ramen menu topped with tempura vegetables that's serviceable enough if not as amazing as, say, their finely sliced sashimi, and Miho Izakaya does a vegan one, although I've yet to try it). I first heard of WAFU when Pierce ended up at my table at the NightLight one post-brunch Sunday afternoon in early Spring, and he tantalized me with his vision of a build-your-own ramen menu where patrons could chose from veggie, fish-only, or pork broths along with a variety of noodles and add-ons, which sounds like rainy-night heaven to me. It won't be long before we get to see how it shakes out: WAFU is set to open as early as mid-month, or at least by the end of July. In the meantime, how 'bout that brunch?
