I did just spend $25 whole dollars on a used copy of the vegetarian cookbook Plenty, by London chef Yotam Ottolenghi—because Ottolenghi is not actually a vegetarian, and therefore unconcerned about meat substitutes or protein ratios, it is a vegetarian cookbook that is solely focused on making vegetables taste good. It's pretty great so far; tonight I think I'm gonna try the eggplant and tahini salad mentioned in this NPR article.
Anyway, here's the full list of Beard Foundation winners. I'll second the thumbs-up to Heidi Swanson's Super Natural Every Day: Well-Loved Recipes from My Natural Foods Kitchen; it is one of the most-used of the embarrassing number of hippie cookbooks on my shelf.
