Coming next to Portland: A bone broth bar. Seemingly if there is a culinary niche to be filled, we'll be the ones to do it! (Though we can’t quite match the cereal café London currently boasts—apparently if you build it they will come, no matter what it is.) Broth Bar, however, is more than just a marketing gimmick as it is an off-shoot of Salt, Fire and Time, a company that has been selling broths and other nutritional products for the past six years.

Billed as an old world healing remedy, the broth is made in small batches every three days, with bones sourced from farmers who pasture raise their animals without the use of hormones or antibiotics. Along with the current beef, lamb, turkey and chicken flavors, bison and pork broth are also in the works. There will be add-in options, including miso, noodles, kraut and chicken heart, and a short menu of lunch items, plus housemade kombucha. Other Salt, Fire and Time products, such as coconut yoghurt and jerkies, will also be sold retail.
